Birthdays birthdays!!

So yesterday was my poo bears birthday we didn't do much since the lack of money $$$$ in our bank accounts.. We pulled some weeds in the back yard and ate some squash and elk steaks then set up SAMs surround sound I got him for his birthday. So since Sam got paid today we are going to go to dinner at Texas roadhouse!! Yum mm mm!! When we got home from work I had Sams present sitting on the table so he would see it when he walked in!

Tomorrow we are having a bday party with his friends at our house. The theme... REDNECK TRAILER TRASH!!! this is an easy party to plan! I'll get some pictures of our trashy decorations and random redneck food oh and of course everyone's wardrobe lol. So here is the cake I'm going to attempt to make...

I want to eat you! Carrot cake!

Just found this recipe for carrot cake and omg does it look good!!



Since part of my Summer To-Do List is to try 5 new recipes, I thought I start off by making a classic dessert: carrot cake. Now I think I may have made a version of carrot cake in the past, but I remember it not tasting very good. (which completely opposite from my delicious Carrot Cake Pancakes) But after trying out this fool-proof Carrot Cake (technically called "Grandma Hiers' Carrot Cake") recipe by Paula Deen, I will never go back to making any other carrot cake again! It is so moist and full of yummy flavors. Completely irresistable.

When I saw this recipe was by Paula Deen, I knew it was going to be anything but lowfat. But it's always nice to splurge, right? So here's the recipe. Enjoy! :0)

Ingredients:
Butter, for pans
2 cups all-purpose flour, plus more for pans
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
4 eggs
1 1/2 cups vegetable oil
3 cups grated carrots
1 1/2 cups chopped pecans, optional

Frosting:

2 (8-ounce) packages cream cheese, room temperature
1 stick salted butter, room temperature
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans, optional


Directions:
Preheat oven to 350 degrees F. Grease and flour 3 (9-inch) round pans; Line bottom of the pans with parchment paper.
In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add eggs and vegetable oil. Using a hand mixer, blend until combined. Add carrots and pecans, if using.
Pour into pans. Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes. Remove from pans, place on waxed paper and allow to cool completely before frosting.
For the frosting:

Add all ingredients, except nuts, into a medium bowl and beat until fluffy using a hand mixer. Stir in the nuts, if desired. Spread frosting on top of each cake layer. Stack the cakes on a serving plate and serve.

Sam deserves to have such an amazing birthday he has worked so hard to provide for us I couldnt thank him enough! Best husband for sure!!

Our grass patch

Remember the patch of grass I told you guys about yesterday well I took a picture!!!

That is the ONLY green patch in the whole yard.. Ain't it pretty!!!

South beach diet day 4, 5,6,7,8,9

Well haven't posted for awhile about our south beach diet.. Iv cheated... A few times.. Snickers, butter finger, salt water taffy, & starburst. Oh man they sure were good. Good news I haven't gained any weight from eating those. But since Friday iv lost a little over 1 lb. Iv been losing about 2-4 ounces each day besides Monday I didn't lose anything due to the snickers and such. So I'm happy with my results so far..

Sam had some carbs on Sunday at family dinner and that caused him to gain 2 lbs... Not sure where he stood this morning. He is doing very good with the diet though. Have a harder time losing weight but he says he feels really good. I think for me I just had a lot more water weight than he did so that's mainly what iv lost.

Lookin good in the neighborhood!

Here are a few new pictures takin with my iPad..

Here is Sam tiling the side yard getting it ready for his redneck birthday party for the horse shoe pits. Then hopefully getting gravel shortly after so we can park his blue beast that leaks all over the place!!!







Btw notice the hill in the back full of weeds!!! When we got our highdro (spelling) seed done the people were so mad that they had to do our whole yard ( when we bought our house the sprinklers and front yard seed came with it) so they didnt pull the weeds at our house like they did everyone else's in the neighborhood. So our yard is full of weeds it's horrible! We have trees growing!!

Also notice the nice view of the mountains we have from our back yard.

Oh oh and see that big puddle yeah the sprinkler people decided to do a crap job just like the seed and the sprinkler I. That corner just spins all the way around and causes a nice puddle. No they will not come fix it we have called numerous times.

Now here are a few pictures of the front of our house I know iv posted so e before but here is more hahah.











Can u tell we have been weeding the edges of the grass. There is a trail of weeds on the side walk lol. And can you see the hole in the front yard. Yeah stupid sprinkler people suck and they came to fix it once but it did the same thing and they won't come back to fix it. Our grass is slowly coming in.. I haven't noticed a change in it in the last month I think it looks the same. But there is this amazing patch In the back yard I will have to post a picture it's so green and thick I just want to roll around in it but it's too small of a patch hahaha.

Now these next pictures are crappy the sun was so bright coming through the windows I couldnt get a good picture but the. I'd close the blinds and it was too dark for a picture and the iPad camera SUCKS!

I finally finished my rug I made but... I'm not too crazy about it we are still trying to get used to it. But it is holding up pretty well.. It is starting to roll up on the sides but I'm thinking some kind of tape would fix that problem..






Not too shabby eh...

So last week we went to the D.I. and we saw this chest that we both fell in love with!! It was wicker and brown. A little beat up but I didn't care... I do t have a before picture on my iPad but here is what he looks like painted white! We love it! Oh and please don't judge the hurricane that happened in our bedroom we are in the process of organizing lol....





Oh and this chest cost us a whopping $60 which we thought was pretty good!

Day 17

17- someone you would want to switch lives with for one day and why.


This one is easy!!! Lauren Conrad! Lol. I am absolutely jealous of her life even though mine is great... I secretly believe her and I are best friends.

She has her own clothing line.. Well actually a couple different clothing lines. And I love them!! One is featured at khols department store the other is higher priced line. She has the cutest style and perfect hair hahaha!


I'd love to switch lives with her for a day!!

My friend Sean!!

So I promised my friend from work that today I will write a post about her because..... Today is her last day at work!!!! Wahhhhh!!! It's ok though cause that means we can actually hang out outside of work since she won't be working every night and every Saturday.

Anyways my little Sean Sean was such a great employee! She helped me out so many times when i was in a rut!

She surprised me often with the worlds best cupcakes.

A delicious slurpee.

Cookies on valentines day.

She is a great friend!! Sean Sean have fun in Cali and Oregon with your family!! Call me when you get back to Utah!
